Carbs Aren’t Essential—But Your Gut Might Disagree

A neuroscientist-nutritionist explains what zero-carb diets leave behind, and why your microbiome cares.

We’ve all heard it: You don’t need carbohydrates to survive.
That’s technically true.

But if you're aiming for optimal health, especially long-term gut and metabolic health, the story gets a little more nuanced.

Neuroscientist-nutritionist Dr. Anayanci Masis-Vargas breaks down what zero-carb diets like carnivore may leave behind, and why that matters.

Clip Highlights:

  • Why fiber from plants is essential for gut health—even if carbs aren’t strictly necessary to live

  • How fiber fuels your microbiome

  • Why obsessing over food order may be unnecessary for metabolically healthy people

  • The value of being mindful—not fearful—around food

What Your Gut Actually Needs

Fiber isn’t just roughage. It’s fuel for your microbiome.
Dr. Anayanci reminds us that while carbs may not be essential for survival, plant fibers are important for a thriving gut environment:

“If you are completely zero carb—say, carnivore—then you won't have that.
It doesn't mean you're going to die.
You're probably going to be super lean.
But you're not really exploring what a healthy gut can do for you.”

Strict no-carb diets can improve body composition short-term, but they may leave your gut ecosystem underfed if followed long-term.

Obsession vs. Food Freedom

Dr. Anayanci also discussed a growing trend online: strict rules about the “correct” order to eat food (like always eating protein first, carbs last).

This does affect gastric emptying and blood sugar response, but she urges balance:

“It’s sound science.
But for people who are metabolically healthy, this obsession with food order can go too far.”

Her take? Focus less on hacks and more on the big picture:

A diverse, fiber-rich diet. A peaceful relationship with food.
And habits that support gut health without fear.

Takeaway:

You can survive without carbs. But if you want lasting gut health, balanced metabolism, and real resilience, your microbiome needs some fiber.
